Fried Hand Pies on Soured Milk Dough
Milk gone sour? No problem — turn it into hand pies with egg and herbs! They're delicious. These thin, flatbread-style pies made with soured-milk dough are bound to become a favorite. On top of the wonderful dough, they're filled with an all-time favorite: chopped egg with herbs and a little mayonnaise!
Cooking method

Step 1:
Add the sugar, salt, and yeast to the soured milk. If the milk tastes very sour to you, add the baking soda too. If it's only slightly sour, you can skip the soda.

Sift in the flour a little at a time and start bringing the dough together.

First with a whisk or spoon, then by hand.

Work in the oil at the end of the kneading.

Once the dough is well kneaded, cover it and set it aside to rise.

Meanwhile, make the filling. Peel and dice the boiled eggs.

Chop the herbs.

Finely chop the green onion.

Combine the eggs, green onion, and dill.

Stir in the mayonnaise, salt, and pepper. You can use sour cream instead of mayo, but you need something to bind the filling so it holds together and the pies are easier to shape.

The filling is ready.

And so is the dough.

Punch the dough down a little.

Pinch off pieces of dough, roll each into a ball, flatten it into a round, and place some filling in the center.

Seal the pies closed.

Heat the oil in a skillet and add the pies to fry.

Once golden on one side, flip them to the other.

Fry until done. You can cover the pan with a lid while the second side cooks.

Serve with sour cream or yogurt. They're delicious hot, but they also travel well cold — great for work or a road trip.
