Zucchini Chebureki with Ground Meat

- Grate the zucchini on the medium side of a grater. Let it sit for 10 minutes so the juice drains off. 2. Meanwhile, finely chop one onion and lightly sauté it. Add the ground meat and brown it a little. Season with salt and pepper to taste and simmer, covered, for 7 minutes. Let it cool slightly. 3. Grate the second onion on the coarse side of a grater and combine it with the zucchini. Lightly beat the eggs and pour them into the onion and zucchini. Add the chopped herbs, vegetable oil to taste (1–2 tbsp), and the milk. Mix everything well. 4. Sift the flour into the zucchini mixture and stir to a batter a bit thicker than crêpe batter. At the end, season the batter with salt and pepper to taste. 5. Brush a hot skillet with vegetable oil. Pour in the batter as you would for a medium-thick pancake. 6. Before the pancake sets, spoon a tablespoon of the meat filling onto one half. Fold the other half over the filling and press the pancake closed along the edge. Fry the chebureki covered on both sides until golden. Enjoy!
