Chicken-and-Rice Hand Pies from Store-Bought Dough

Craving hand pies but don't feel like fussing with dough? This recipe is for you! These pies came in so handy — I had boiled chicken and cooked rice in the fridge and a package of yeast dough in the freezer. A little effort, and delicious yeast pies are ready! I usually bake pies from store-bought dough in the oven, but this time I decided to pan-fry them. They turned out really tasty and budget-friendly!

    The ingredients you'll need: the rice and chicken, as I mentioned, were cooked ahead of time, and the dough was thawed at room temperature.

    I cooked the rice ahead of time in salted water (a 1:3 rice-to-water ratio, by cups).

    Then I rinsed the rice in cold water so it stayed fluffy.

    I finely chopped the onion and also fried it ahead of time in hot vegetable oil until golden.

    Chop the cooked chicken however is easiest for you.

    I used a blender for this.

    Add the chopped chicken, fried onion, and chopped herbs to the rice — I'm using parsley today, but any herb works.

    Season with salt and pepper and mix well. The filling is ready!

    I bought the yeast dough as ready-made balls — very convenient to work with; just divide each into 2 pieces.

    Press each piece into a flat round.

    Or just roll it out thin with a rolling pin.

    Spoon the filling on top. I should note that quite a lot of this filling fits into one pie, and because the dough is cold from the fridge, it's much easier to work with.

    Pinch the edges closed and set each pie seam side down.

    I ended up with 12 large pies — one is enough to fill up an adult. They come out great baked in the oven, too: just transfer them to a baking sheet, let them rise for 15–20 minutes, and bake at 350°F (180°C) until golden. But today I felt like pan-frying them for my husband.
