Fluffy Baked-Style Skillet Omelet

Farm-fresh eggs and milk are best, and they should both be at the same room temperature when you cook. It's a light breakfast that's still filling.

    1. Wash and dry the eggs, crack them into a bowl, and beat them with a hand whisk.
    1. Pour the milk into the eggs, whisk again, and season with salt and ground black pepper.
    1. Grease a deep skillet with a pat of butter, pour in the egg-and-milk mixture, cover with a lid, and set over the heat.
    1. Cook the omelet over low heat for 13–15 minutes.
