- You can use any cabbage for these fritters, but young cabbage is best — the fritters come out especially juicy, tasty, and fragrant, and they cook faster. Cabbage that's too old and tough won't work well here. So: wash the cabbage, dry the leaves with paper towels, and shred it as finely as you can. Transfer it to a large bowl, sprinkle with salt, and lightly scrunch it with your hands so it releases its juice. Wash and peel the carrots, then grate them on the medium side. Peel the onion and garlic; press the garlic through a garlic press and finely chop the onion with a knife. Add the grated carrots, onion, and garlic to the cabbage. Wash the parsley and dill, blot them dry, chop them finely, and add them to the vegetables, mixing everything well. Crack the eggs into a separate bowl, beat them well with a whisk, and add salt to taste, ground black pepper, coriander, and the sifted flour. Mix thoroughly, then stir this into the vegetables and combine everything again. Heat a cast-iron skillet well with the vegetable oil, then spoon in the vegetable mixture. Fry until golden, flip, and fry the other side until golden as well. Set the finished cabbage fritters on paper towels to blot the excess oil, then serve them while they're still hot. Enjoy!
