Eggless Rice Flour Flatbreads in a Skillet

A very simple, quick bread substitute! These eggless rice flour flatbreads cook up in a skillet thin, crisp, and great-looking. Serve them in place of bread alongside a main dish, or with honey or jam to go with a cup of hot tea or fragrant coffee!

    1. First, sift the rice flour through a fine sieve. This gets rid of any lumps or stray bits and aerates the flour at the same time, which makes the finished flatbreads lighter and more tender. 2. Add salt to taste to the sifted flour and stir the dry ingredients together well. 3. Next, pour in 1/3 of the vegetable oil and stir it in thoroughly. You can use refined sunflower oil, olive oil, or sesame oil — sesame gives the finished flatbreads an especially appetizing flavor and lovely aroma. 4. Bring the measured water to a boil separately in a kettle, then pour the boiling water into the flour mixture and immediately stir everything with a wooden spoon or a regular tablespoon while the water is still hot — this matters. Once the mixture has cooled a little, turn it out onto a work surface (a table or cutting board) and knead a soft but elastic dough. Add a bit more flour if needed — in the end the dough shouldn't stick to your hands. 5. Wrap the dough in plastic wrap or slip it into a bag so it doesn't dry out, and let it rest at room temperature for about 20 minutes. 7. Unwrap the dough and knead it briefly again. Dust the board with flour and roll the whole piece into a thin sheet no more than 2-3 mm thick. Brush the sheet with 1/3 of the vegetable oil. 8. Roll the dough up into a log, then cut the log into equal portions. Roll each piece into a thin round — the thinner, the better. 9. Grease the skillet with the remaining oil and heat it well. Fry each flatbread, one at a time, until golden on both sides.
