Baked Chicken Medallions with Mushrooms and Cheese

Juicy, golden chicken medallions with mushrooms and cheese! A lot of cooks reach for pork or beef instead of chicken, mostly because chicken so often turns out a little dry. Not these medallions, though — they come out incredibly tender and juicy.

  • Peel the onion and cut it into small dice. Chop the mushrooms into small pieces too. Sauté them together in a skillet until lightly golden. Porcini or other wild mushrooms make the medallions even tastier, but those are usually only available in season. Rinse the chicken breast, pat it dry with paper towels, and chop the meat finely — the texture should end up like ground meat. Stir ketchup and chicken seasoning into the chopped chicken, and add salt if needed. Mix everything together well. Once the mushrooms and onion have cooled, stir in a little mayonnaise and combine. Line a baking sheet with foil and brush it with vegetable oil. Shape the chicken mixture into round medallions and set them on the sheet. Grate the cheese on the fine side of a box grater. Top each medallion with a teaspoon of the mushroom-and-onion filling, then sprinkle grated cheese over the mushrooms. Bake in an oven preheated to 350°F (180°C) for 25 minutes. These days a lot of home cooks rely on chicken regularly, and keeping it from drying out takes some experimenting. This recipe was one such experiment, and it worked: the ketchup and mayonnaise keep the medallions juicy. You can swap them out — sour cream or plain yogurt in place of the mayonnaise, and a different sauce for the ketchup. Either way they won't turn out dry, thanks to the mushroom, onion, and cheese topping. If you love fresh herbs, stir a little chopped dill into the chicken mixture.
