Make salted peanuts right at home! Pan-roasted salted peanuts are a super simple snack that's perfect alongside a cold beer. They're also great to munch on their own or as a quick bite. Unlike the store-bought kind, these are roasted without a drop of added fat or oil—the only seasoning is plain salt.

  • Pour the raw in-shell peanuts into a large, dry heavy-bottomed skillet (a cast-iron pan works great), without adding any fat or oil. Set the pan over medium heat, let it warm up, then lower the heat. Roast the peanuts for 10–15 minutes until golden. Stir constantly with a spatula or spoon so they toast evenly on all sides and don't scorch—peanuts burn very quickly if you don't keep them moving. Once the skins start to loosen and the peanuts begin to crackle in the pan, they're done and you can take them off the heat. After the nuts have roasted to your liking, pull the pan off the heat and let them cool to room temperature. Then take a small handful at a time and rub them between your fingers to flake off the skins—an easy way to peel them. Despite how simple it looks, peeling takes a good while—about 15–20 minutes—but it doesn't require any special kitchen gadgets. Return the peeled peanuts to the pan. Next, make a quick brine: dissolve the salt in a little clean drinking water. You can warm the water slightly first to help the salt dissolve. Set the roasted, peeled peanuts back over low heat and pour the brine over them. Stir well so the salt coats everything evenly. Once the liquid has evaporated, take the pan off the heat. Let the salted roasted peanuts cool and serve. They make a fantastic beer snack! Enjoy!
