Juicy beef chops in batter in a frying pan

Delicious, fragrant, rosy, for dinner and for a holiday! Juicy chops can be fried in a frying pan and from beef, despite the fact that beef meat, compared with pork and chicken, is tougher and denser. In our recipe we will show you how to achieve this.

Step-by-step cooking

Cooking time: 25 min
  1. Step 1:

    Step 1.

How to make juicy beef chops in a frying pan? Prepare the necessary ingredients. For this recipe, it is better to take not frozen, but fresh meat, otherwise the chops risk getting dry. Eggs need large, selected. If the eggs are small, it is better to take 3 pieces so that the batter is enough for all the meat. In addition to the spices specified in the recipe, you can add your own to taste, or replace some spices with others to your liking.

  2. Step 2:

    Step 2.

First prepare the batter. How to make a batter? In a bowl, break the eggs and whisk until smooth. The yolk should mix well with the protein.

  3. Step 3:

    Step 3.

Add turmeric (you can replace turmeric with curry), paprika, salt and ground black pepper. Whisk the mixture again with a whisk until smooth.

  4. Step 4:

    Step 4.

Add flour. I advise you to sift the flour through a sieve — so there will be fewer lumps and the batter itself will turn out more tender.

  5. Step 5:

    Step 5.

Mix the mixture thoroughly, breaking up all the lumps. If the batter turns out to be too thick and dense, dilute it with 1-2 tablespoons of vegetable oil. The finished mass should be viscous, but fluid.

  6. Step 6:

    Step 6.

Wash the meat and be sure to dry it with a paper towel, otherwise excessive moisture will not allow it to fry — it will stew.

  7. Step 7:

    Step 7.

Then cut the meat into thin slices no more than 1 cm wide. For convenient and smooth slicing, I advise you to put the meat in the freezer for 20 minutes. During this time, it will not have time to freeze too much, but it will catch slightly and it will be easier to cut it into thin pieces. I had pieces no more than 5 mm thick.

  8. Step 8:

    Step 8.

Beat off the beef slices from both sides with a hammer, trying to preserve the integrity of the meat, there should be no through holes in the chop. To do this, cover the pieces of meat with plastic wrap or a cellophane bag. Another positive point is that juice will not fly in all directions from under the meat.

  9. Step 9:

    Step 9.

Dip the prepared chops into the batter on both sides.

  10. Step 10:

    Step 10.

Heat part of the vegetable oil in a frying pan over high heat. Put the meat in the batter and reduce the heat to medium. Fry the chops on both sides for about 2 minutes until golden brown, adding vegetable oil if necessary.

  11. Step 11:

    Step 11.

Serve the finished chops to the table hot. Any side dish is suitable for beef chops: boiled rice, potatoes, buckwheat, pasta or boiled vegetables. Enjoy your meal!

Beef can be replaced with any other type of meat that you like best. But keep in mind that the cooking time, as well as the taste and calorie content of the dish will change. Pork and lamb tend to be fatter than beef, and chicken fillet or turkey are leaner. At the same time, the cooking time depends not only on the type of meat, but also on which part of the carcass is used and how old or young the meat is.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

You can check whether the oil has warmed up well enough in a frying pan in a simple way. Lower a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process.
