Thin Flatbreads with Soured Milk

The simplest recipe for thin homemade flatbreads to serve in place of bread! Made from the most basic pantry staples, these light flatbreads always come in handy. Thin and crisp, they're great alongside a main course instead of bread — or serve them with a pot of fragrant tea or freshly brewed coffee, drizzled with runny honey or homemade jam. So good!

  • Take the soured milk out of the refrigerator ahead of time — for this recipe it should be at room temperature. In a small bowl, beat the egg to a fluffy foam with a hand whisk or an ordinary fork. Pour the soured milk into a large bowl (roomy enough for kneading). Add the salt and baking soda and stir. Pour in the beaten egg and mix everything together again. Sift the flour separately, removing any bits and breaking up any lumps. Add the sifted flour to the soured-milk mixture a little at a time, stirring first with a spoon and then kneading with your hands. You can turn the dough out onto the counter or knead it right in the bowl. Add a little more flour if needed. The dough should be elastic and not stick to your hands. Cover it with a clean towel or wrap it in plastic so it doesn't dry out, and let it rest for 20–30 minutes. Once rested, knead the dough briefly again, then divide it into equal pieces — one per flatbread. Using a rolling pin, roll each piece into a thin round. The thinner you roll it, the thinner and crispier the flatbread. Pour sunflower oil into a skillet and heat it to high. Add a flatbread and fry until golden, then flip and fry the other side. Cook the rest the same way. Set the fried flatbreads on a large flat plate lined with a paper towel to soak up the excess oil. Serve hot in place of bread or rolls, with tea. Enjoy!
