Battered Lavash Pockets with Filling

A go-to lifesaver for any cook! Lavash is endlessly useful in the kitchen, and stuffed little pockets are one of the best things to do with it. Once you fry them in batter, they're impossible to resist. These pockets are delicious hot or cold. Give them a try!

    First, make the filling. Open a can of button mushrooms and drain off the liquid. Cut the mushrooms into small pieces and put them in a bowl.

    Then grate the cheese on a medium grater — you can grate it straight in with the mushrooms.

    Add a little mayonnaise and some dry spices — I used dried dill. Stir everything together well with a spoon.

    Cut the lavash into small squares. Put a little of the mushroom filling on a square, fold in the sides, and roll it up.

    Wrap up all the filling in pieces of lavash this way.

    For the batter, combine the egg and sour cream. Add the flour and mix. To get it to the right consistency, add water a tablespoon at a time. The batter should be about the consistency of pancake batter. Dip each pocket into the batter.

    Heat the skillet until hot and add a little vegetable oil. Place the battered pockets in the pan seam side down. Fry them for 1–2 minutes over medium heat.

    Then flip them with a knife and fry the other side another 1–2 minutes.

    Transfer the finished pockets to paper towels to blot off the excess oil. Brew some fresh, fragrant tea to go with them. Your crispy, appetizing pockets are ready! Dig in! Enjoy!
