Batter-Fried Fish
The fish comes out tender and juicy — a great dish for a light meal! My whole family and I are devoted fish lovers, and seafood fans in general. Luckily, where we live we can buy both saltwater and freshwater fish at a fair price. I especially love cooking with saltwater fish. I know plenty of recipes, but today I want to share the tricks behind a Latvian classic: fish fried in batter.

Step 1:
How do you make batter-fried fish? Start with a fillet of any fish you love.

And cut it into small pieces.

Make the marinade: to the vegetable oil, add lemon juice, chopped parsley, pepper, and salt.

Now drizzle the marinade over the fillet pieces and let the fish soak it up for 1–2 hours.

Meanwhile, make a thin batter from the water, flour, vegetable oil, and salt, then fold in the egg whites you've beaten ahead of time.

Once the fish has marinated, dip the pieces in the batter and fry them in a well-heated skillet in plenty of vegetable oil. Fish is best served with mashed potatoes.

- How do you fillet a whole fish? Remove the tail, head, and fins. Cut along the back down to the backbone. Turn the fish on its side. With a sharp knife, slice the meat away from the backbone. Flip the fish and cut the fillet from the other side. Clean the inside, removing the black membrane, since it's bitter and will spoil the flavor. Rinse it and be sure to dry it well.
