- Use low-fat milk, fresh eggs, and refined sunflower oil. The first few pancakes cook fairly slowly, but once the pan is good and hot the process speeds up — so keep this in mind and don't wander off from the stove for long. 1. Crack the eggs into a deep bowl and beat them with an electric mixer into a fluffy foam. Fresh, farm eggs are ideal. 2. Pour a third of the milk into the fluffy egg foam, add the sugar and a pinch of salt, and whisk. 3. Sift the flour and add it to the wet ingredients in batches, stirring with a hand whisk. 4. Once all the flour is worked in, pour in the rest of the milk and the sunflower oil, and stir. You don't have to use sunflower oil — olive, corn, or any other neutral, odorless vegetable oil works too. 5. Cook the pancakes over medium heat on both sides. Since there's already oil in the batter, you can skip greasing a non-stick pan entirely. If you're using a pan without a non-stick coating, add a little oil. Serve the pancakes with jam, honey, or sour cream. You can also prepare various fillings and fold the pancakes into envelopes or roll them up.
