Pasta with Meat in a Slow Cooker

A very simple but delicious dish — almost like it came out of a camp kettle! Pasta with tender pieces of meat comes together easily in a slow cooker. It's nothing fancy, but it's incredibly savory, aromatic, and filling. This kind of pasta is usually a hit with the whole family, young and old alike.

  • A great option for a quick weeknight dinner after work, when you don't have the time or energy to stand at the stove for long but still want to put a tasty, home-cooked meal on the table for your family.
  • Start by gathering all your ingredients. Rinse the meat well under cold water and pat it dry with paper towels. For the main ingredient you can use chicken, turkey, or pork — whatever you like best. Put the meat on a cutting board and trim away any bones. Tenderloin or a lean cut works best. Cut the meat into small, roughly even pieces. Peel and rinse the onion and carrot. Finely dice the onion; the carrot can be cut into medium or large pieces. Peel the celery too and cut it into strips. Turn on the slow cooker and select the "Sauté" or "Bake" setting, depending on what your machine offers. Pour the vegetable oil (about 2 tablespoons) into the pot. Let it heat up, then add the chopped vegetables — onion, carrot, and celery. With the lid open, sauté the vegetables until golden; the timing depends on your machine's power. Then add the pieces of meat and cook everything together until the meat changes color. Rinse the tomatoes, score an X in the bottom of each, and blanch them in boiling water. Slip off the skins and purée the flesh in a blender. (You can also use canned tomatoes in their own juice.) Pour the tomato purée into the pot and bring it to a boil on the same setting. After a couple of minutes, season with salt and ground black pepper. Mince the garlic and add it in as well. Add the pasta (durum wheat holds up best) to the pot and pour in the water. Close the lid and switch to the "Stew" setting. Set the timer for 20 minutes. When the timer goes off, turn off the machine and serve. If you like, sprinkle the pasta with fresh herbs.
