- Any pumpkin will work for these delicious fritters, but the brighter it is, the prettier the color of the finished dish. So if you have an orange, juicy, sweet pumpkin — perfect! That's exactly what we'll use for fritters the whole family is bound to love. Once you've picked your pumpkin, rinse it under running water. Peel it, carefully paring off the skin in a thin layer with a knife. Cut it in half and scoop out the seeds. Grate the flesh — a medium grater works better here than a coarse one. Let the grated pumpkin sit, and after about 10 minutes drain off the juice it releases so the batter isn't too runny. Peel the onion and the garlic cloves. Grate the onion on a medium or fine grater, and press the garlic through a garlic press. Add the onion and garlic to the pumpkin and mix well; if the onion released a lot of juice, drain it. Now add the eggs and sift in the flour. Season to taste with salt and ground black pepper (freshly ground pepper adds a little zip and brightens the flavor). Mix everything thoroughly with a spoon, or with your hands. If the batter is too thin, add a bit more flour. Set a skillet over medium heat, pour in vegetable oil, and heat it well. Using a spoon, drop round patties into the pan and fry for 4–5 minutes until nicely golden. Flip the fritters and fry the other side another 2–3 minutes. Transfer the finished fritters to a paper towel to blot excess oil. If the pan looks dry, add a little more oil. Serve the fritters warm. They're great with sour cream or any sauce that pairs with vegetables, such as a cream or cheese sauce. Enjoy!
