Shrimp Saganaki

Greek-style seafood — refined and delicious! Shrimp saganaki is large shrimp in a red sauce, always served piping hot. The sauce, scented with anise, is wonderfully savory, and you tear off pieces of bread to dip into it as you eat. The tomatoes for the sauce shouldn't be too watery; if they are, squeeze out the excess juice before chopping.

    1. First, peel the shrimp and remove the dark vein.
    1. Wash the tomatoes and score a shallow cross in the skin of each. Pour boiling water over them, then plunge them straight into ice water. After that the skins slip right off.
    1. Peel the onion and garlic and chop them with a knife. Finely chop the chili pepper too. Cut the tomatoes into large chunks.
    1. In olive oil, sauté the shrimp just until they turn from translucent to pink, about a couple of minutes.
    1. Remove the shrimp and add the onion, garlic, and chili to the pan. Fry for a minute, then add the tomatoes and ouzo and simmer for 3 minutes.
    1. Return the shrimp to the pan, add the chopped parsley, crumble in the feta with your hands, stir gently, and season with salt and pepper to taste.
  • Serve right away, hot off the stove.
