  • Pour the kefir into a deep bowl, add the baking soda, and stir. Let it sit for 5 minutes. Then add the flour, sugar, and salt, knead into a dough, and let it rest for half an hour. Meanwhile, boil the potatoes and mash them, then dice the onion. Fry the onion in oil, stir it into the mashed potatoes, season with salt and pepper, and mix. Divide the rested dough into 6 pieces and roll each into a not-too-thin round. Spoon the filling into the center. Gather the edges of the dough up over the filling, pinching them together but leaving a small opening in the center. Heat the oil in a skillet and lay each belyash in it opening-side down. Fry until golden on both sides.
