Lazy Chopped Chicken Cutlets

Cutlets made from chopped chicken breast and onion, scented with fresh herbs. These "lazy" cutlets are best made with chicken breast, since it's the most tender meat for the job. Unlike traditional cutlets, the lazy version turns out much more tender — and they're easier to cook, too.

  • They're called "lazy" cutlets simply because the meat isn't pounded with a mallet — instead it's cut into small cubes, and the cutlets fry up like fritters. Here's how it goes: dice the chicken breast into small cubes and chop the onion even finer. Finely chop the fresh herbs, too. Combine the chicken, onion, and herbs in a deep bowl, then add the egg, starch, sour cream, salt, and seasoning. Stir everything together well with a spoon while a skillet with vegetable oil heats up. Cook the lazy cutlets just like fritters, dropping spoonfuls of the mixture onto the hot skillet. Start over high heat, and as soon as the cutlets brown, lower the heat and flip them. Cover the skillet with a lid and cook the cutlets over low heat until done, about 15 more minutes. Remove them from the skillet, arrange on a plate, and serve hot.
