Catfish in Batter

Tender fish in a golden batter — seriously appetizing! Catfish in batter is best served with a side of fluffy rice or mashed potatoes, and fresh vegetables make a great addition too. To get rid of the muddy smell catfish can have, drizzle the fillets with freshly squeezed lemon juice; it does the job perfectly. In place of the mayonnaise, you can use a double portion of sour cream, preferably homemade.

  • How do you fry catfish in batter?
    1. Put the catfish fillets in a bowl, drizzle with lemon juice, and let sit for 20 minutes.
    1. Meanwhile, crack the egg into a bowl, add the sour cream and mayonnaise, and whisk together.
    1. Sift the flour into the mixture, add salt and the ground pepper blend, and whisk the batter until smooth. It should have the consistency of thick sour cream.
    1. Cut the catfish fillets into pieces, dip them in the batter, and fry in vegetable oil until golden brown on both sides.
