Flounder in the Slow Cooker

Incredibly tender fish! A wholesome dish with no charring or char-grilled edges to worry about. Cooked this way, flounder turns out unbelievably tender and appetizing — gentle enough to serve to kids as well as adults. Soft, delicate, juicy, and fragrant, every bite practically melts in your mouth. If the little ones will be eating it, just leave the wine out. A creamy cheese sauce gives the dish a rich flavor and real charm. For this recipe, your slow cooker needs a "manual cook" (custom temperature) setting so you can dial in the exact heat.

    1. Gently rinse the flounder fillets under running water, then pat them dry with paper towels. 2. Lay the fillets in a single layer on a large flat dish and drizzle them with the lemon juice. 3. Cover the dish with plastic wrap and let the fish marinate for about 15 minutes. 4. Meanwhile, prep the rest of the ingredients. Rinse the leek and cut it into rings — not too thin, about 1/2 inch (1 cm) thick. 5. Rinse and trim the celery stalk with a sharp knife, then cut it into small pieces. Peel the onion and dice it. 6. Set your slow cooker to the manual-cook setting and dial the temperature to 320°F (160°C). 7. Add the butter to the pot, and once it melts, sauté the prepped vegetables — onion, leek, and celery — for about 10 minutes. 8. Spread the flour on a flat plate. Pat the flounder fillets dry again, then dredge them in the flour, shaking off any excess. 9. Lay the fish on top of the sautéed vegetables and season with salt and ground white pepper. 10. Pour in the dry white wine and cook on the same setting for 15 minutes. 11. In a deep bowl, combine the cream and cream cheese, whisking until smooth. 12. After the 15 minutes are up, pour the sauce over the fish and cook for 10 minutes more. That's it — the fish is ready. Enjoy!
