Cooking method
To cook eggplants with egg like mushrooms, you need quite a bit of effort:
- wash the eggplants, cut into cubes;
- break the eggs into a bowl, whisk with a whisk or fork;
- pour eggplant with egg mass and leave for an hour, during which time they should completely absorb the eggs;
- peel onions, wash, cut into small cubes;
- fry eggplants with onions in sunflower oil for 25 minutes until light golden blush, make moderate fire and do not forget to stir in the process;
- season the already prepared dish with salt and pepper to taste.
Serve on the table, garnished with herbs as desired.

How to remove the bitterness from eggplant? Cut the eggplant into plates, circles or cubes, add salt, leave for about 10 minutes until the juice is released. Drain the resulting liquid, rinse the eggplants and start cooking.
