Simple Khrenovina (Horseradish-Tomato Relish)

Very easy to make, and in winter it's a huge hit in place of ketchup. I love things spicy, so I always add hot chili pepper to my khrenovina. As far as I know, it's not in the classic recipe.

  • These proportions are approximate; if your garlic and horseradish are strong, you can use less and leave out the hot pepper entirely. Run everything through a meat grinder and pack it into sterile jars or bottles, however you're used to storing it. Keep it in the refrigerator. Lately I've started doing this: I bring the ground tomatoes to a boil, cool them almost to room temperature, and then add the rest of the ingredients. This way the relish keeps longer, and not a single bottle has ever gone off.
