- Eggs are one of the most popular breakfasts anywhere in the world. There's no end to the variations — scrambled, sunny-side up, with bacon, with vegetables, and so many more. Plenty of cultures have their own egg dish, too; Israeli shakshuka comes to mind. Lots of parents run into the "I don't want to eat" standoff at breakfast, so here's my take on a morning meal with a fun, eye-catching look that draws kids right in. You shape each sausage into a little palm tree with branches. I recommend mild, tender wiener-style sausages (hot dogs) — they bend more easily and are simpler to work with. Use the freshest eggs you can find; they're not just better than store-bought, they're better for you. To keep a sausage from toppling over once it's in the pan, use a fork: pierce it through the middle and prop it up against the side of the skillet. Cook each sausage for 2 minutes per side. Fry the eggs as you would sunny-side up. To keep the eggs from sticking or burning, crack them into a hot skillet — and after searing the sausages, it'll be plenty hot. Season to taste. You can cook vegetables alongside the sausages, like tomatoes or peppers; it comes out just as delicious. The recipe is very quick, so your morning "eaters" won't have to wait long. This was a favorite way to serve eggs back in my own childhood, and even now it's worth thinking about how to plate breakfast nicely for kids. You can leave the eggs whole, sunny-side up, or break them up with a wooden spatula. To finish, chop some fresh herbs — green onion, parsley, dill, or cilantro, whatever you or your kids like — and scatter a little over the plated dish. That's how you get a real "palm island." Enjoy!
