Baked Pork Lula Kebab with Starch

A delicious, hearty meat dish for dinner! Lula kebab is usually made with lamb, but if you can't get lamb — or just want to try something different — you can make it with pork. This recipe won't give you any trouble. Give it a go!

Cooking method

    To make homemade lula kebabs, measure out your pork. Choose meat with a bit of fat on it. Cut the meat into pieces.

    Run the cut meat through a meat grinder with a large plate so the ground meat comes out coarse. Peel the onion and garlic and rinse them in cold water. Grind the peeled onion right after the meat, and press the garlic through a garlic press. Add the ground onion and garlic to the bowl with the meat.

    Add the eggs to the bowl. Season with salt and spices to taste — ground black pepper along with dried dill and parsley work well here.

    Mix everything together very well with your hands. If the mixture seems too loose, add a little starch. Then knead and slap the mixture against the bottom of the bowl until it turns sticky and cohesive. This makes it denser so it won't fall apart while baking. Refrigerate the meat mixture for 30 minutes to chill thoroughly.

    Prepare a baking sheet and line it with parchment paper. Shape the meat mixture into small logs and place them on the sheet. Traditionally, lula kebab is molded onto skewers and grilled over coals, but since we're baking these at home in the oven, you can skip the skewers. Bake the logs in an oven preheated to 350°F (180°C) for 40–50 minutes. If your oven has a broiler, give them a little time under it at the end.

  • Pork lula kebabs come out really tasty. You can serve them on their own or round them out with a side of potatoes or rice, a fresh vegetable salad, or a simple platter of sliced vegetables. Make a spicy sauce to go with them. The onion in the recipe keeps the meat juicy and tender, so use large onions. Instead of dried herbs, you can add fresh dill or cilantro. Have fun cooking!
