Grilled Pork Rolls over Coals
One of the best ways to cook meat over coals! I won't pretend these pork rolls are quick and effortless — they take a bit of fuss — but the finished dish will exceed all your expectations. Give them a try!

Step 1:
How do you make pork rolls over coals? Gather your ingredients. Boneless pork loin works best — it slices cleanly into portions. The butter should be soft, so take it out of the fridge ahead of time.

Cut the meat into portions about 3/4 inch (1.5–2 cm) thick. Pound each piece well with a meat mallet.

Step 3:
For the filling, take a roomy bowl and combine the soft butter, chopped dill, and minced garlic. Add salt to taste. Mash everything together with a fork.

Step 4:
Cut the dry-cured bacon into strips 1.5–2.5 inches (4–6 cm) wide.

Step 5:
Spread each pounded piece of meat with the herb butter — just a little, in a thin layer. That's plenty for juiciness and flavor.

Then lay the bacon strips on top of the butter, stopping a little short of one edge. Roll up the meat, starting from the end where the bacon begins.

Make all the rolls this way, place them in a container, and refrigerate for 2–3 hours so they can set.

To cook them, you can cut each roll in half and thread them onto skewers, or, like I do, lay them on a grill grate over hot coals, turning them now and then so they cook evenly.

Step 9:
The butter will melt and drip out, but as it does it soaks the rolls from the inside with its rich flavor. It's the butter that keeps the pork rolls juicy and tender. As it drips, the flames will try to flare up — don't let them, or the rolls will burn!
