Baked Farmer's Cheese Pancakes with Prunes
Prunes make the perfect filling for syrniki (farmer's cheese pancakes). I'm not much of a dried-fruit person — I usually save them for salads or baking. But the other day I came across an interesting recipe for syrniki that are first pan-fried and then baked. Paired with prunes, they turned out incredibly tasty.
Cooking method

Step 1:
Prepare the ingredients. For these delicious syrniki with prunes, you'll need: farmer's cheese (at least 5% fat), prunes, a large egg, semolina, sugar, vanilla sugar with natural vanilla, baking powder, and salt.

Cover the prunes with boiling water and let them sit for 8-10 minutes, then drain. If the prunes have pits, remove them.

Mash the farmer's cheese with a fork or press it through a sieve.

Add the egg, sugar, vanilla sugar, and salt to the cheese. Mix everything thoroughly.

In a separate bowl, mix the semolina with the baking powder.

Add the semolina and baking powder to the cheese mixture and stir thoroughly.

Cut the prunes into small pieces.

Add the chopped prunes to the cheese mixture.

Mix everything well.

For coating, you'll need flour. I used all-purpose wheat flour, but rice flour is even better — it makes the syrniki softer.

Shape the mixture into small patties and roll them in flour.

Heat vegetable oil in a skillet and fry the syrniki over high heat on both sides until golden brown. It's easier to flip them with two spatulas, or a spatula and a fork, since the batter is fairly soft. Supporting them with a second utensil helps them keep their neat round shape.

Then transfer the syrniki to a parchment-lined baking sheet and finish them in an oven preheated to 400°F (200°C) for about 6 minutes.

Transfer the finished syrniki to a plate. Dust with powdered sugar if you like. Serve with condensed milk, honey, jam, any sweet sauce, or simply with sour cream. Enjoy!
- You can skip the oven and just pan-fry the syrniki. If you do, don't make them too large or thick, or they'll burn on the outside before the centers cook through. You can also make the same syrniki a different way: wrap the prunes inside each one.
