Grilled Chum Salmon Steaks
The tastiest fish steaks come out of this recipe. Food cooked over live fire has a special something — it's incredibly aromatic and delicious. These chum salmon steaks are exactly like that: quick and easy to make, marinated in a light marinade, and full of wonderful flavor!

Step 1:
Gather all your ingredients. I recommend buying chilled (not frozen) chum salmon steaks — the fish is much better that way. Any oil works: vegetable, olive, even sesame. I use bottled lemon juice, but you can squeeze it fresh from a lemon as you cook.

Rinse the fish, pat it dry, and sprinkle the steaks with lemon juice.

Brush the fish all over with vegetable oil.

Season with salt, and add your favorite fish seasonings if you like. Our marinade is as simple as it gets — in my opinion, a fine fish like this doesn't need a lot of seasoning.

Let it marinate for 10-15 minutes.

Meanwhile, light your fire and wait until the wood burns down to glowing coals. You can also use ready-made charcoal, which cuts the cooking time down considerably.

Set a grate over the coals and lay the fish steaks on it. Grill for about 7 minutes.

Then flip the steaks and grill the other side for the same amount of time. If needed, grill each side once more. Go by the thickness of your steaks and how done you want them.

Serve the fish right away while it's hot. A sprinkle of sesame seeds on top at serving time is a nice touch. Enjoy!
- Chum salmon is the second most popular salmon species. It's packed with healthy fatty acids that help remove cholesterol from the body, plus plenty of vitamins A, E, D, and PP. Chum salmon is fairly fatty, so it's best served with simple, fresh accompaniments: cucumbers, tomatoes, bell peppers. Given all that, serve your grilled chum salmon steaks with a fresh vegetable salad dressed in a little oil. A fine fish like this doesn't need a starchy side. I'll also note that this recipe keeps the fish from drying out — it comes out very tender, soft, and juicy. Enjoy!
