Zucchini Roll-Ups with Two Fillings

- Rinse the zucchini in cold water and pat dry. Cut them lengthwise into thin planks no more than 1/4 inch (7 mm) thick. Season the slices with ground black pepper and salt to taste and let them sit a while to draw out the moisture. Meanwhile, get a grill pan ready (a regular skillet works too). Brush the surface with vegetable oil (sunflower or olive) and heat it over medium. You can brush the zucchini planks with oil as well. Lay a batch on the hot pan and cook until you get those signature grill marks on one side, then flip and cook the other side. Set the grilled zucchini on paper towels to blot the excess oil, and let them cool. Now make the cheese filling. Rinse the parsley in cold water and dry it on a paper towel, then trim off the stems and finely chop the leaves. Peel the garlic and cut it into large pieces. In a blender, first blitz the garlic and parsley, then add the cream cheese and blend into a smooth mixture. Season with salt to taste. Make the cottage cheese filling. In the blender, combine cottage cheese (at least 9% fat), sun-dried tomatoes, and peeled, chopped garlic. Blend until smooth and season with ground black pepper and salt to taste. Once the zucchini planks have cooled, start rolling them up. Spread a layer of filling over a plank, covering the whole surface evenly. Grab one end and roll the zucchini into a spiral, securing it through the middle with a toothpick so it doesn't unroll and the filling stays put. Stand the finished roll-ups upright on a plate and serve. They keep in the fridge for a couple of days. Enjoy, it's really delicious!
