Step-by-step cooking
Step 1:
How to make Fish and Chips? First of all, prepare the batter, as it will need to be put in the refrigerator for a while. Take a bowl or any other deep container, sift wheat flour into it through a sieve. Add soda and salt to the flour. Mix the ingredients.
Step 2:
Pour the cooled dark beer into the dry mixture, constantly stirring it with a whisk so that there are no lumps left in the batter. Then cover the bowl with the finished batter with cling film or lid and put the container in the refrigerator for at least 30 minutes.
Step 3:
The next step is to prepare potatoes. Wash it well, peel it and cut it into long strips. This can be done with a knife, but it will be more beautiful if you use special equipment, for example, I used a potato cutter. It is also possible to use a "slicer" with a replaceable nozzle for cutting long bars. Be sure to dry the sliced potatoes — excess moisture will not allow it to become crispy.
Step 4:
Fry the potatoes either in a deep fryer, if there is one, or in a regular saucepan. Pour oil into it and put it on the fire. When the oil is warmed up, put the potatoes in a saucepan and fry them until a golden crust forms. Remove the finished potatoes with a slotted spoon to drain the excess oil. Put it on a baking sheet, add salt and put it in the oven for 5 minutes. Cook at a temperature of 130 ° C.
Step 5:
It's the fish's turn. For this dish, take a fillet of white fish — cod, haddock or tilapia will do. I had pollock. Wash the fillets and cut them into portions.
Step 6:
Pour flour into a small container. Now roll the pieces of fish fillet in flour, then send it to the batter so that it completely covers the pieces of fish.
Step 7:
Then fry the pollock pieces in boiling oil. You can fry them right after the potatoes. Place the fried pieces on paper napkins in order to get rid of excess oil.
Step 8:
Put the finished fish and potatoes on one dish together and immediately serve to the table. This dish must be served hot, because the batter will "go limp" and cease to be crispy, and the potatoes will become "sluggish". Enjoy your meal!
Fish and chips. Who is this dish for? Well, first of all, for everyone who loves potatoes and fish. Secondly, for those who love fast food. Thirdly, it is ideal for sports fans who like to eat while watching a particular sporting event. Well, just for fun noisy companies. Therefore, if you consider yourself or someone close to one of these groups, you can safely start cooking this traditional English fast food dish.
Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it. How to determine the roasting temperature and choose the best oil for frying, and which is better not to use at all, read here .
To check whether the oil has warmed up well enough in the pan, you can do it in a simple way. Lower a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process.
How to properly cut a whole fish into fillets? Remove the tail, head and fins. Cut the carcass along the spine to the spine. Turn it on its side. With a sharp knife, cut the meat from the backbone bone. Turn the carcass over and cut the fillet from the other side. Clean the inside by removing the black film, as it is bitter and will spoil the taste. Rinse and be sure to dry well.
