Crispy Breakfast Toast with Bacon, Egg, and Veggies
One of many breakfast variations for egg lovers. This one is especially good for anyone who likes a hearty breakfast, since it's a sandwich of two slices of bread with a filling in between. It also makes a great midday snack, because it's easy to take along.
Cooking method

Step 1:
Start by taking a slice of sandwich bread and setting it on a board. Press the bottom of a glass into the center of the slice, pushing down firmly to make a round indentation in the middle.

Put two slices of bacon in a skillet (you can use smoked bacon if you prefer) and, without adding any oil, fry them on both sides over medium heat. Then take the pan off the heat.

Step 3:
Take a large skillet and add both slices of sandwich bread at once: the plain one and the one with the indentation (place that one indentation-side down). Toast the bread until lightly golden, then flip the slices. Crack the egg into the indentation and season it with salt to taste. Cover the pan with a lid and keep cooking until the egg is set. Then take the pan off the heat.

Step 4:
Get everything ready to build the toast. Wash the frisée and the tomato. Cut the tomato into thin rounds. Set the plain crisp slice of toast on your work surface. Layer on everything for the sandwich: frisée leaves, the fried bacon, a slice of cheese, and the sliced tomato.

Step 5:
Now take the slice with the egg (you can add a little pepper to the egg if you like) and set it on top of everything else. Your crispy breakfast toast with bacon, egg, and veggies is ready! Serve it right away, while it's warm.
