Savory Cottage Cheese Fritters with Cheese and Herbs
Simple, fast, delicious, fragrant, and filling. Tender cottage cheese, melty, stretchy cheese, fresh herbs, and a crisp crust, that's the perfect description of this dish! A great appetizer, a hearty breakfast, or just a tasty snack.

Step 1:
It's all very simple and fast. Chop the herbs. I'm using green onion, cilantro, and dill in equal parts, 10 g total, but use whatever you like and have on hand. Grate the cheese on the large holes of a box grater. I used 2 level tablespoons of flour, but go by your own cottage cheese; you may need more or less. Combine everything and mix well.

You'll end up with a nice, firm mixture like this.

Dust the surface where you'll shape the fritters with flour. Divide the mixture into 7 equal pieces, about 50 grams each, and roll them into rounds. Dust the tops with flour too.

I shape the fritters using a knife, a trick I really love that I saw online: I roll the fritter against the flat of the knife on all sides. It's hard to describe any other way. Maybe everyone already knows this except me :)

Fry them in a skillet in vegetable oil over medium heat, 4 to 5 minutes per side, or just go by the golden, browned crust.

They don't run or spread. Nice and firm. And the aroma in the kitchen...

They're best served with fresh sour cream.
