    It's all very simple and fast. Chop the herbs. I'm using green onion, cilantro, and dill in equal parts, 10 g total, but use whatever you like and have on hand. Grate the cheese on the large holes of a box grater. I used 2 level tablespoons of flour, but go by your own cottage cheese; you may need more or less. Combine everything and mix well.

    You'll end up with a nice, firm mixture like this.

    Dust the surface where you'll shape the fritters with flour. Divide the mixture into 7 equal pieces, about 50 grams each, and roll them into rounds. Dust the tops with flour too.

    I shape the fritters using a knife, a trick I really love that I saw online: I roll the fritter against the flat of the knife on all sides. It's hard to describe any other way. Maybe everyone already knows this except me :)

    Fry them in a skillet in vegetable oil over medium heat, 4 to 5 minutes per side, or just go by the golden, browned crust.
