Cooking method
1. Peel the onion, rinse and dry. Then put the onion on a cutting board and finely chop it into cubes. The smaller the onion is cut, the better it will be for the cutlets. It will give them juiciness and special softness.
2. Garlic is also cleaned, washed and crushed using a special press or passed through a fine grater. Garlic gives the finished dish a little sharp notes and a certain piquancy.
3. Add chopped onion and garlic to the minced fish. Minced fish can be bought ready-made in specialized supermarket departments, or you can make it yourself, clean the fish and grind its fillets through a meat grinder or in a blender. Add salt and freshly ground black pepper to taste. You can also add any other spices and seasonings as desired (thyme, mint, basil, ginger, fennel, ground coriander, etc.).
4. Zucchini gives the minced meat a special softness and tenderness. It must first be cleaned by removing the skin, then rinsed and grated through a grater. It is best to take young zucchini, as they contain small seeds. If an old zucchini is used, it is best to remove large seeds. Then also put the grated zucchini in a bowl with minced fish.
5. Break the chicken egg into a bowl with minced meat and mix well.
6. Add semolina to the minced fish and carefully knead the mixture for the cutlets.
7. Add finely chopped greens if desired.
8. With your hands, form minced fish cutlets of the desired shape.
9. Pour the breadcrumbs into a plate and roll the cutlets in them, turning them from different sides.
10. Pour a little vegetable oil into the pan and heat it. Next, fry the cutlets on one side over medium heat for 6-7 minutes, turn them over to the other side and fry until golden brown.
Ready-made minced fish cutlets with zucchini can be served with a side dish of vegetables, rice or spaghetti.
