  • Marbled beef is one of the most delicious things you can put on a plate, and the most popular way to enjoy it is grilled as a steak. You'll find it in the meat section of the supermarket or at specialty online butchers. First, get the meat ready for the grill. If you bought the steaks ahead of time, take them out of the fridge about an hour — or even two — before cooking. For a juicy, flavorful result, the meat should come up to room temperature. As it gets close to cooking time, fire up the grill so it heats evenly; you're aiming for a surface temperature of around 250°F (120°C). Rinse the room-temperature steak under cold running water and pat it dry with paper towels. Sprinkle it with salt, pressing the salt into the surface of the meat. Then season with your favorite dry rub, again pressing the spices directly into the beef. How much salt to add depends on the blend you're using, since many pre-made rubs already contain plenty. Lay the seasoned steak on the preheated grill and sear it on one side until the internal temperature reaches about 125°F (52°C) — that's medium-rare. Check it with an instant-read meat thermometer. Move the steaks to a plate and brush them with half of the butter. Then crank the grill to high and let it heat up for 10 minutes. Return the steaks to the grill and sear the other side for a couple of minutes, or a little longer depending on how you like your steak.
