Today, grilling is the healthiest and most wholesome way to cook meat, since it requires no oil or any other fat. The grill grate creates a seared crust on the surface that keeps the juices inside, so the meat comes out as juicy as possible. Excess fat drips into the grooves between the ridges of the grate, which makes the finished dish moderately lean and light. And it hardly matters which kind of grill is used: over a campfire, a barbecue, electric, air, or a special grill pan.

The meat here can be absolutely anything: fillet, on the bone, pork, beef, lamb, chicken, turkey, rabbit, any game, any meat products and offal like tongue, liver, heart. Another advantage of this method of cooking meat is that it requires no special skills from the cook. In other words, the "just take it and cook it" principle applies here. You can salt and season with spices as you cook, to your taste. And keep an eye on the doneness of the meat too — either serve it well done or rare.
For a first encounter with grilled meat recipes, it's best to choose a loin of pork without sinews or fat layers. The cut piece should be about one and a half to two centimeters thick. In length and width it can be sized so that, say, 2–4 pieces fit in the pan, depending on the size of the cookware. That is, a piece should be one serving. Why pork? The thing is, tender pork cooks quickly and is hard to ruin. Harder than beef, for example.
As for beef, the rump, round, shank, tenderloin and thigh, as well as heart and liver, are suitable for grilling. For lamb dishes it's better to take meat from the back, neck and ribs.

It's worth keeping in mind that meat which was heavily frozen beforehand doesn't always taste good. It usually stays dry (and can be set aside for boiling or stewing). So for the grill it's better to use fresh.
