Cooking method
The first secret of perfect cheesecakes is cottage cheese. No matter how strange it may sound, for delicious, tender, and most importantly healthy cheesecakes, real cottage cheese is needed. If these are home-made products, we buy only from trusted sellers, if factory packaging - carefully study the composition. There should be no substitutes for milk fat and other impurities there.
The most delicate texture is obtained from store-pressed cottage cheese 5-9%. Its secret is in the grind and uniformity, but it can also be achieved with a homemade product. Simply grind the cottage cheese of a large fraction with a blender or rub through a sieve twice.
We load the cottage cheese into the blender bowl, add sugar and egg, beat until completely homogeneous. Add flour, salt, vanillin (if there is none, you can replace it with vanilla sugar). Whisk again or mix with a fork, as convenient.
Form a curd ball of small diameter and press it down on both sides. It turns out a smooth round cake. To prevent the dough from sticking to your hands too much, we first rub a small amount of flour with our palms. For uniform roasting, do not make the cheesecakes too thick, 1.5 cm will be quite enough.
Preheat the frying pan with vegetable oil to a very hot state. Spread the prepared cheesecakes and fry on high heat until golden brown for 1 minute. Reduce the heat to a minimum, close the lid and steam for another 2 minutes, this is necessary for cooking the middle. Turn over and repeat the procedure on the other side.
Tender golden cheesecakes are ready, spread on a plate, season with syrup, jam or sour cream, and serve to the table. If desired, raisins or other dried fruits can be added to the dough.
