  • To make a chickpea flour omelet, the first step is the batter. Since there are no eggs, chickpeas — or rather chickpea flour — take their place. Chickpeas are a remarkably nutritious food, rich in folate, iron, magnesium, and potassium, and chickpea flour has more than six times the protein of white wheat flour. On top of that, this dish is a great option for vegetarians and anyone eating plant-based or fasting. So, to make this unusual and very wholesome breakfast, start by combining all the ingredients. Blend the chickpea flour and water together in a blender or food processor. Then add the tofu. You can leave it out, but the tofu is what gives the omelet body and that appealing texture. For a fluffier result, add baking powder too (or substitute baking soda). Blend everything into a smooth, pourable, slightly stretchy batter. To give the omelet a savory, aromatic edge, be sure to season it. Add salt and whatever dry spices you like: turmeric, for instance, lends a bright orange color and a cheerful look; chili powder adds heat; and curry gives the chickpea omelet an Eastern flavor. Once the batter is mixed, heat a little vegetable oil in a skillet over medium heat. Pour in the batter and cook the omelet on one side.
