Chicken Burrito with Beans and Tomatoes
A standout of authentic Mexican cooking! This spicy, hearty burrito is a breeze to put together and comes out great every time.
Cooking method
-
Step 1:
Gather all the ingredients and spices you'll need to make burritos for dinner.
-
Step 2:
Finely chop one onion and sauté it in a preheated skillet with the vegetable oil until golden.
-
Step 3:
Cut 300 g (about 10 oz) of chicken into pieces, add to the skillet, and cook over low heat, stirring.
-
Step 4:
Add a finely chopped piece of red chili pepper, black pepper to taste, and a teaspoon of salt; stir and keep cooking.
-
Step 5:
Add the diced bell pepper and 100 g (about ½ cup) of beans and continue cooking over low heat. Meanwhile, cut one tomato into pieces and grate 100 g (about 1 cup) of hard cheese on the coarse side of a grater.
-
Step 6:
Add the chopped tomato to the skillet and stir-fry.
-
Step 7:
Pour in 250 g (about 1 cup) of tomato sauce, stir everything together well, cover, and let the chicken and vegetables simmer over low heat for 15 minutes.
-
Step 8:
Transfer the cooked chicken and vegetables to a large bowl and stir in the grated cheese a little at a time.
-
Step 9:
Spoon the filling just below the center of the tortilla, spread it into a strip, and roll it up. Your hearty, super-easy dinner burrito is ready. Enjoy!
- A burrito is a classic of authentic Mexican cooking: a soft corn or wheat tortilla wrapped around a variety of fillings. Feel free to add cooked ground or chopped meat, refried beans, rice, tomatoes, avocado, or cheese. For a homemade burrito, sour cream or a spicy salsa (or any hot sauce you like) makes a great topping. The tortilla is the foundation of every Mexican burrito — a thin, neutral-tasting flatbread made from corn or wheat flour. Making tortillas at home is no harder than making pancakes. Tortillas are used for enchiladas, burritos, fajitas, tacos, and quesadillas, wrapped around all kinds of sweet or savory fillings, and they're often served in place of bread alongside other dishes.
