Bacon-Wrapped Stuffed Meatballs ("Fat Cat in a Coat")

    1. Preheat the oven to 400°F (200°C). 2. Peel, rinse, and finely dice the onion. Heat a little vegetable oil in a skillet, add the onion, and sauté over medium heat until golden, about 5–7 minutes. Transfer to a bowl and let cool. 3. Finely dice the olives and coarsely grate the cheese. Add both to the bowl with the sautéed onion and mix well. 4. Cut the white bread into medium pieces and cover with the milk. Mash the soaked bread and add it to the ground meat. Season with salt and freshly ground black pepper to taste and mix thoroughly. 5. Divide the meat mixture into 8 equal portions and roll into balls. Flatten each ball, place a spoonful of the onion-olive-cheese filling in the center, then carefully wrap the meat around it and re-form into a ball. 6. Slice the bacon into thin strips—you'll need as many strips as you have meatballs. Lay out a strip of bacon, set a stuffed ball at one end, and roll it up in the bacon. Secure the ends with a toothpick so they don't unwrap. 7. Line a baking dish with foil and arrange the bacon-wrapped meatballs in it. Bake in the preheated oven for about 30 minutes. 8. Remove from the oven and carefully (so you don't burn yourself) pull out the toothpicks. The dish is ready! Garnish with fresh herbs and serve. Enjoy!
