Belarusian Stuffed Potato Pancakes (Kolduny)

A really tasty dish—crispy on the outside, juicy on the inside. Serve with sour cream or plain yogurt.

  • Grate the potatoes on the fine side of a grater. Transfer to a sieve, season with salt, squeeze, and let stand for 5 minutes. Drain off the liquid that collects, but keep the starch that settles at the bottom—stir the well-squeezed potatoes back into it. Add the lemon juice, the egg, and the seasoning, and mix. For the filling, add finely chopped onion (chopped by hand, not ground) and a little green onion to the ground meat, then season with salt and spices to taste. Place a spoonful of the potato mixture in your palm, add some filling, top with more potato, and pinch the edges to seal well. Set the patties on paper towels and blot the tops with more paper towels—the less moisture, the better. Fry for 4 minutes per side over low heat with the lid on, then remove the lid, raise the heat, and fry until golden. Serve with sour cream.
