    1. First, prep the ingredients for this wonderful salad: rinse the kaffir lime leaves, pat them dry, and slice thinly; wash and dry the chili, then (wearing gloves) remove the stem and seeds and mince it finely—if you like heat, you can leave the seeds in; wash and dry the cucumbers and shave them lengthwise into thin ribbons; wash the tomatoes and halve them; rinse the cilantro and mint, blot dry, and leave the leaves whole (or tear them into a few pieces if you prefer); peel the shallots and slice them thinly into half-rings; rinse and dry the veal. 2. Cook the rice noodles according to the package directions. 3. In a small bowl, make the dressing: combine half the lime juice with the fish sauce, brown sugar, lemongrass, sliced lime leaves, and minced chili. Stir well. 4. Heat a grill pan over medium heat with the oil. Toss the veal with the remaining lime juice, then lay it on the hot pan and sear about 3 minutes per side (adjust to your taste). Transfer to a plate and set aside. 5. In a large bowl, combine the cooked rice noodles, cucumber ribbons, tomatoes, mint and cilantro leaves, bean sprouts, and shallots. Slice the veal across the grain into long strips and add it too. Pour the dressing over the top and toss gently but thoroughly. Serve the salad. It's delicious—enjoy!
