Bacon-Wrapped Turkey Rolls with Green Beans
These rolls are wonderfully tasty and juicy. I still remember the sensation this recipe caused at home. I'd originally planned to make them with chicken, since I wasn't a big fan of turkey's flavor—but in the end I followed the original recipe and didn't regret it. This is one of the few dishes where I really love the taste of turkey. Paired with a delicate onion sauce and crisp bacon, the rolls are simply irresistible.

- Rinse the turkey fillet and dry it well. Cut it into 5–6 even slices. Pound each piece lightly on both sides and season with salt and pepper.
- Lay a few thawed green beans on each slice, roll up the fillet, wrap it tightly in 3–4 slices of bacon, and secure with wooden picks.
- Peel the onion and garlic. Finely chop the onion and press the garlic.
- Brown the rolls in a sauté pan with the oil.
- Stir in the onion and garlic and cook for another 3 minutes.
- Pour in the broth, cover the pan, and move it to a preheated 375°F (190°C) oven for 25 minutes.
- Transfer the finished rolls to a serving dish.
- Strain the sauce that formed during cooking, whisk in the butter, and season with salt and pepper.
- Serve the rolls with the sauce spooned over, garnished with parsley sprigs.
