Chinese Black Bean Sauce

The peanuts and sesame seeds take its already fantastic flavor and make it even richer and deeper.   • Traditional in China but unusual to us, this sauce is a perfect match for rice. It's a great way to surprise guests at a get-together or treat your family to a little culinary event. In China, black beans are believed to have healing properties — whether that's true is hard to say, but one thing's for certain: they taste wonderful! The sauce is easy to make. First, peel the garlic cloves and finely chop them with a sharp knife. Don't press or grate the garlic for this recipe, since it can scorch during frying. Set a large, deep skillet over high heat, add the black beans, and toast them in the dry pan (no oil) for 1–2 minutes, then take them off the heat — this drives off the excess moisture. Pour the vegetable oil into another skillet, add the garlic, and fry, stirring, for 1 minute until fragrant. Add the black beans, stir everything together, and cook for 8 minutes, stirring as you go. Add the roasted peanuts and sesame seeds, the chili, and the spices, and mix well. Sprinkle in the sugar, pour in the soy sauce, stir, wait another half a minute, and take it off the heat. Transfer the sauce to an airtight glass container and let it sit for 1–2 days — during that time the flavors meld and the sauce becomes especially fragrant and delicious. It keeps for several months in an airtight container.
