Meatloaf with Sauerkraut and Apples

Step 1:
Choose a streaky pork belly for this dish, rinse it, and peel off the skin. Cut and split the belly into two flaps, then prick it all over with the tip of a knife.

Sprinkle the pork generously with your favorite meat seasoning, add salt to taste, and rub it into all sides.

Set the pork aside for 40 minutes to soak up the marinade while you prepare the filling.

Sauerkraut makes a light, elegant side for the pork belly. Heat a skillet, add the vegetable oil, and add the sauerkraut. Cook over medium heat for 20 minutes, stirring in a little seasoning and mixing thoroughly.

Spread the cooled sauerkraut filling over one flap of the pork.

Fold the other flap over the filling and secure it well all around with toothpicks.

Set the roll on a baking sheet, shape it neatly, and bake in an oven preheated to 482°F (250°C) for 20 minutes. Take the roll out, arrange the apples in the pan alongside it, lower the oven to 400°F (200°C), and bake for another 35 minutes.
