    To grill the potatoes, start with potatoes boiled in their skins. If you're taking them on a picnic, boil them at home on the stove. If you can boil them over the fire in a pot on-site, bring them raw and cook them there. Choose smooth, evenly shaped, clean tubers of roughly the same size, and avoid varieties that fall apart easily.
