Pan-Fried Fish Milt (Soft Roe)

Surprise your family with a delicious seafood dish! Fish milt — the soft roe of male fish — is surprisingly easy to pan-fry. It's a fairly unusual ingredient; most people toss it when cleaning fish, not realizing this by-product is perfectly edible. There are lots of ways to use it — in salads, soups, and pâtés — but the method in this recipe is one of the simplest, and the result is delicious. The milt is breaded and fried in oil. Use a refined, neutral (odorless) oil.

  • Fish milt is rich in complete animal proteins, which makes it a nutritious, worthwhile ingredient. It's such a valuable food that it really shouldn't go to waste! 1. Rinse the fish milt under cold running water, then drain it in a colander or sieve. 2. Spread the flour on a flat plate, add a couple of pinches of salt, and stir. Dredge the milt in it. 3. In a separate bowl, combine the breadcrumbs with the garlic powder, a pinch of salt, and ground black pepper. Mix well. 4. Crack the egg into a bowl and whisk until smooth. 5. Meanwhile, pour the oil into a skillet and set it over the heat — a heavy-bottomed, smaller skillet works best. 6. Dip each piece of milt into the egg, then into the seasoned breadcrumbs, and place it straight into the hot oil. 7. Fry until golden, then flip and fry the other side until golden as well. 8. Line a plate with paper towels and set the fried milt on it to drain off the excess oil, then arrange it for serving. Sprinkle with lemon juice and garnish as you like — fresh herbs are nice. Dig in!
