It is recommended to cook only fresh fish. As a last resort, you can take a frozen one, only if it was frozen with your own hand. But you can't buy frozen fish - you can get on a stale and spoiled product. Cupid's head can not be thrown away, but you can cook a fragrant ear from it. The marinade in this recipe is the simplest - salt and pepper, as well as lemon juice. In principle, you can prepare a marinade to your taste. Although the option given in the recipe does not clog the delicate taste of cupid, but on the contrary - only emphasizes it.
1. The fish is thoroughly washed under running water, then proceed to cleaning. First of all, we clean the scales. This can be done with a sharp knife or other devices for cleaning fish.
2. We cut off the head. We cut the abdomen, clean out the insides. Using scissors, we cut off the fins. We make a deep incision along the ridge, divide the fish into two fillets.
3. We remove the ridge with the rib bones. The upper protective film from the carcass can not be cut off. It performs an important role: it does not allow the meat to spread during pickling and frying.
4. The filleted fish is washed again under running water, carefully dried with paper towels.
5. Marinade for white cupid is not the same as for ordinary river fish. There is no need to use vinegar here, since there is no smell of mud in the fish. Just sprinkle the fillet with lemon juice, then rub with salt and pepper.
6. We leave the cupid to marinate for half an hour, after which we pour vegetable oil. Place the fillets on the grill and fry for 8-10 minutes.
7. After 1-2 minutes, the grate is turned over to one side, then to the other side. The fish should be fried evenly.
Ready cupid is served with fresh vegetables or with sauces.
