Cooking method

    Put the ground meat in a large bowl—the one you'll mix everything in.

    Cut the onion and garlic into small pieces.

    Rinse the dill and trim off the thick stems—you won't need those.

    Purée the onion, garlic, and dill in a blender, or run them through a meat grinder along with the meat. Add salt and pepper.

    Mix everything thoroughly, working in the egg white, then chill for an hour so the flavors can come together.

    After an hour, take out the mixture and shape it into round patties with wet hands. Place them in a hot, oiled skillet. Sear over high heat until golden, then lower the heat, cover, and cook through.
