Quick Skillet Cookies

Try making these simple, quick skillet cookies! My grandmother used to treat me to cookies like these, and I still hold those happy memories close to my heart. Sometimes I bake them myself when I only have a few ingredients on hand. I'm sharing the recipe in case anyone else wants to give it a try. They're good with tea or coffee, but I like them best with milk or cocoa.

    1. Put the egg yolk in a bowl, add the sugar and salt, add the sour cream, and stir.
    1. Pour in the vegetable oil and whisk the mixture.
    1. Sift the flour together with the baking powder and knead the dough. It shouldn't stick to your hands — it's soft and easy to work with.
    1. Roll the dough into a log, cut it into pieces, then roll each piece out into a round (I use a textured rolling pin for an embossed surface).
    1. Cook the cookies in a dry skillet (no oil) on both sides until nicely golden — about 3 minutes per side.
  • So good with milk or cocoa!
