Lazy Belyashi (Fried Meat Patties)

Really tasty belyashi made the lazy way — give them a try! My kids adore these belyashi: the batter is soft and airy, with a juicy meat filling inside. I love belyashi not just for their taste but also because they're fuss-free and quick to make. This dish is perfect for dinner, especially served with your favorite sauce.

    1. Pour the kefir into a saucepan and warm it over the heat (to 82-86°F / 28-30°C, no more).
    1. Add the baking soda to the kefir and stir well (it will react).
    1. Add the salt and sugar, stir, and let it sit for 5 minutes.
    1. Then sift in the flour a little at a time, whisking the batter each time, until it reaches the right consistency (about as thick as homemade sour cream).
    1. Peel the onion, dice it finely, and add it to the ground meat along with the pressed garlic. Season the filling with salt and pepper and mix thoroughly.
    1. Pour vegetable oil into a skillet and heat over medium. Spoon on batter, then filling, then more batter (the key here is speed — work without dawdling).
    1. Fry the belyashi on both sides until nicely golden (lower the heat here so they don't burn while cooking through evenly inside).
