Lazy Yeast Belyashi (Fried Onion Patties)

Make lazy belyashi and save time and money! My mom used to make these belyashi and taught my sister and me all the ins and outs of cooking. These are made completely without meat — the flavor comes from spices and plenty of onion. Fragrant and airy, they practically melt in your mouth! Be sure to give them a try!

    1. Put the yeast in a bowl, add the sugar, pour in warm water (200 ml), and sift in a little flour (about 100 g).
    1. Stir the resulting sponge and leave it in a warm place to rise for about 20 minutes.
    1. Meanwhile, peel the onion and cut it into small cubes.
    1. Once the sponge has risen, add the rest of the warm water (with the dry seasonings stirred into it), sift in the remaining flour, and knead a smooth batter thicker than pancake batter.
    1. Separate the eggs into whites and yolks. Mix the yolks into the batter along with the chopped onion, and whip the whites into stiff peaks with a mixer.
    1. When the batter has risen a second time (in about half an hour), fold in the whipped whites.
    1. Spoon the batter onto a skillet with a tablespoon and fry the belyashi in preheated vegetable oil on both sides until an appetizing golden crust forms.
